I love to cook, but dinner is not always my thing. Some nights when I come home from long meetings or shoot days, the last activity I want to do is make a meal that involves 12+ ingredients. My mom worked full time while raising me but somehow managed to cook the most delicious food even after a long day at work. The plus: a lot of her recipes require 6 ingredients or less. I present to you my mama’s Butterflied Garlic Butter Prawns.
Butterflied Garlic Butter Prawns
- 2 lbs jumbo prawns
- 1/2 shot rice wine
- 1/2 stick butter
- 1/4 cup minced garlic
- 1/4 tsp. sea salt
- 1/4 slice lemon
Wash and devein jumbo prawns. With a rugged slicing knife, butterfly each prawn from the curved side through the middle, spreading the prawn open onto its shell.
Melt the butter in the microwave for less than 30 seconds, or over the stovetop. Combine the garlic with the butter and mix. Brush rice wine thoroughly over each prawn, sprinkle with salt, and coat it over with the garlic butter.
Place the prawns on a greased baking pan, open side up. Bake at 450° for 10-12 minutes. Plate, drizzle with lemon juice, and serve immediately.
