Wash and devein jumbo prawns. With a rugged slicing knife, butterfly each prawn from the curved side through the middle, spreading the prawn open onto its shell.
Melt the butter in the microwave for less than 30 seconds, or over the stovetop. Combine the garlic with the butter and mix. Brush rice wine thoroughly over each prawn, sprinkle with salt, and coat it over with the garlic butter.
Place the prawns on a greased baking pan, open side up. Bake at 450° for 10-12 minutes. Plate, drizzle with lemon juice, and serve immediately.
